Time to start the Christmas Cake!
Last year I lost my two dear grand ladies – the Christmas cake makers.
I love Christmas cake I know lots don’t, but then they never tried my grandladies cakes not to mention their puddings and shortbreads with the secret ingredient – LOVE!
This year I’ve decided to get in and make the cake of all cakes a decadent mix of prunes, hazelnuts, port, dark chocolate, currants and raisins modelled on a recipe told to me by a work colleague who used to watch his Italian grandma turn the jars of fruit soaked in rum everyday until it was suitably alcoholically rehydrated.
I’ll be soaking the fruit for awhile first so you’ll have to stay tuned for the result. I love the sense of build up preparing a cake like this gives the season. Are you making a Christmas cake this year? What’s your favourite alcohol to soak the fruit in?
